Our air fryer Hasselback potatoes are an easy way to get your potato fix. They're golden brown crispy perfection on the outside and tender on the inside. And this beautiful presentation of the humble potato is surprisingly simple to make.
Place potatoes in the microwave and cook for 1-2 minutes, to slightly soften them.
Using a Hasselback cutter or a buffer, cut ¼-inch slices 3/4 of the way through potatoes.
Preheat your air fryer to 400 degrees F.
Spritz potatoes with oil and rub to cover the potato. Season with salt and pepper to taste.
Cook at 400 degrees F for 18 minutes. Check at the 12 minute mark and adjust cooking time accordingly. Potatoes are done when a fork or knife pushes in easily.
While potatoes are cooking, melt the butter in the microwave. Add the cheese, garlic, and parsley and stir to combine. Brush the butter mixture onto the cooked potatoes and serve.

Create a buffer by using two chopsticks or wooden spoons in place of the Hasselback cutter. See the blog post for step-by-step directions and a photo.
It's important to cut even-sized pieces for even cooking.
Store cooled leftover potatoes in an airtight container in the refrigerator for 4-5 days.
