Whether you’re looking for creative ways to use up butternut squash or a healthy side dish, the whole family is sure to love these fries. And this easy air fryer recipe is made with a simple seasoning blend that complements the squash perfectly.

Making fries from veggies, like our sweet potato fries, is an easy way to sneak in some extra nutrition and they make a great side dish, too. And this air fryer butternut squash recipe is our favorite alternative when we get tired of tater tots and traditional fries. 

Squash fries go great with just about any meal, but we especially love to serve them with hamburgers and shrimp po’ boys.

Ingredients Needed 

  • butternut squash – you’ll need about a pound
  • avocado oil 
  • garlic powder
  • parsley 

How to Make Air Fryer Butternut Squash Fries 

Wash and dry the squash, then preheat the air fryer to 400 degrees F. 

Place the squash on a cutting board and slice the bottom and top top part of the squash using a sharp knife. Use a vegetable peeler to remove the skin. Then, cut the squash in half vertically and scoop out the seeds. 

Now slice the two halves into French fry shapes.

Add the fries to a large bowl and toss in the avocado oil

Sprinkle the parsley and garlic powder over the top and stir so they are coated.

Mist the bottom of the basket with a little cooking oil and add the fries to the preheated air fryer. Cook for 15 minutes, shaking the basket often. 

Remove squash fries and allow to cool slightly before serving with your favorite dipping sauce (we’ve listed some of our favorites below). 

Oven Instructions

Preheat the oven to 425 degrees F. Place the fries on a greased or parchment lined baking sheet. Bake for 30-40 minutes or until they are tender and lightly browned. 

Tips for Making 

  • Butternut squash can be tough to cut, so using a sharp knife is a must! 
  • For even cooking, slice the fries in a similar size. If they are too thick, you can slice them again into smaller ones. 
  • If you need to save time or don’t want to mess with cutting the squash, look for pre-cut butternut squash fries in your grocery store produce section. I’ve seen them in the traditional French fry shape and zig zag cuts. 
  • Add a couple shakes of cayenne pepper if you like a little heat on your crispy butternut fries.
  • Don’t overcrowd your air fryer basket or the fries won’t crisp up. 
  • Depending on the size of your air fryer basket, you may need to cook in batches to get crispy fries.

Savory squash fries can be dipped just like regular fries! These are some of our favorite sauces. 

How to Store 

These are best eaten fresh, but leftover fries can be stored in an airtight container in the refrigerator for up to 4 days. 

Reheat in the air fryer or oven. While they won’t be as crispy as they were when they were fresh, it’s better than reheating in the microwave.

Ingredients

  • 1 butternut squash, about 1 pound
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley

Instructions

  • Preheat air fryer to 400 degrees F.
  • Wash the squash and pat dry.
  • Cut the squash into fries: cut the top and bottom off the squash. Use a vegetable peeler to remove the skin from the squash. Cut the squash in half vertically and scoop out the seeds using a spoon. Cut the two halves into fries, trying to keep them uniform in size.
  • Place the fries in a large bowl, drizzle with oil and toss to coat.
  • Season the fries with garlic powder and parsley and toss to coat.
  • Lightly oil the air fryer basket. Place the fries in the air fryer basket. Cook at 400°F for 15 minutes, shaking the fries every 5 minutes.
  • Remove fries and allow to cool before serving.

Notes

  • Make sure you use a sharp knife to cut the squash.
  • Cut fries in a similar size for even cooking. If your squash is thicker, cut the halves in half again for a smaller fry size.
  • Don’t overcrowd your basket or the fries won’t get crispy.
  • Refrigerate leftovers in an airtight container for 3-4 days. Reheat in AF. Note – they won’t be as crispy as the first time.
  • Oven directions: preheat oven to 425 degrees F. Place fries on a lightly greased baking sheet and cook for 30-40 minutes, until they are tender and lightly browned.
