Air Fryer Breakfast Bombs {Scratch Made}

Air fryer breakfast bombs are made with bacon, eggs and cheese and wrapped into a homemade buttery biscuit pocket. These easy breakfast biscuits can be eaten with a fork or on the go – perfect for busy mornings. 

If you’re not familiar with breakfast bombs, they are similar to a hot pocket (but they taste much better!). And they are also known as stuffed biscuits. Today we are using a homemade biscuit dough and cooking them in the air fryer.

Not only are they great for families, but you can freeze them in batches to make breakfast time a breeze. I love a good meal prepping recipe, especially for breakfast foods.

For this dish you can prep most of the ingredients ahead of time. And when you’re ready to actually prepare them it doesn’t take long at all because all you need to do is assemble the biscuits and cook them.

Ingredients Needed 

  • self-rising flour
  • butter – make sure it’s kept very cold before using
  • milk – you can use regular milk or buttermilk
  • eggs
  • bacon
  • American cheese

How to Make Air Fryer Breakfast Bombs

Start by scrambling the eggs in a sauce pan over Medium heat. Set aside to cool a bit. While the eggs are cooking, fry the bacon to desired crispness and set on paper towels to drain the grease. Chop the bacon and add to the scrambled eggs.

Next, add the flour and chilled butter to a medium bowl. Cut the butter bits into the flour using two forks or a pastry cutter until the mixture is crumbly.

Slowly pour in the milk while mixing it into a dough. Add additional milk if needed, but just enough to hold it together. 

Flour a flat surface then transfer the dough ball. Roll it out so it’s about ½ inch thick. Use a large cutter or the rim of a glass to cut out 16 circles.

Divide the scrambled eggs and bacon onto 8 of the circles and top with cheese.

Place the remaining dough circles on top of each breakfast bomb and pinch the sides together or seal with a fork.

Use a parchment paper liner or spray the air fryer basket with oil. Air fry for 8 minutes at 370 degrees F. 

Allow the breakfast bombs to cool in the basket for 2 minutes before removing and serving.

Breakfast Bomb Substitutions and Variations

  • Meat: swap for turkey bacon, breakfast sausage, or diced ham. Use pre-cooked sausage crumbles or heat and serve sausage patties to reduce preparation time.
  • Cheese: try cheddar or pepper jack.
  • Veggies: add sauteed diced green pepper, onion or mushrooms.
  • Brush cooked biscuits with melted butter if desired.
  • Use refrigerated biscuit dough to reduce preparation time.

Tips for Making


  • It’s not necessary to preheat the air fryer for this recipe, unless your air fryer model requires it.
  • Use an egg wash if desired – whisk together 1 egg with 1 Tablespoon of water and brush on the sealed biscuits before cooking.
  • If you are going to preheat your air fryer, don’t add the parchment paper liner until you are ready to place the breakfast bombs in.
  • Don’t overcrowd the basket – you need to leave room for air to circulate and for the biscuits to expand.
  • Make ahead: prepare the eggs and bacon and store separately until ready to assemble the biscuit bombs.

How to store leftovers

  • Store leftovers in the refrigerator in an airtight container for up to 3 days. Reheat in the air fryer at 350 degrees F for 2-3 minutes.
  • To freeze, allow the stuffed biscuits to cool, then transfer them to a freezer bag. To reheat, thaw in the fridge overnight and air fry until warmed throughout.

INGREDIENTS

  • 2 cups self-rising flour
  • 4 tablespoons cold butter shredded or cut into small pieces
  • 2/3 to 3/4 cup milk or buttermilk
  • 4 eggs
  • 6 slices bacon
  • 2 slices American cheese quartered

INSTRUCTIONS

  • Beat eggs in a mixing bowl. Transfer to a lightly greased skillet and scramble over Medium heat. Remove from pan and cool slightly.
  • Cook bacon in a skillet to desired crispness. Remove from pan to a paper towel lined plate to drain and cool. Dice after bacon has cooled.
  • Add flour and butter to a large bowl. Using a pastry cutter, or two forks, work the butter into the flour until the dough resembles pea-sized crumbs.
  • Slowly add 2/3 cup of milk and continue to mix until the dough holds together. Add additional milk (do not exceed 3/4 cup total) if your mixture requires more liquid in order to hold together.
  • Transfer the biscuit dough ball to a lightly floured flat surface. Roll out the dough until it’s stretched to make 16 circles (about 1/2 “ thick). Using a round cutter or a large mouth mason jar, cut 16 round circles.
  • Divide the scrambled eggs and bacon pieces evenly between 8 of the circles. Top with a slice of cheese.
  • Place a biscuit circle on top of the cheese and pinch the edges together to seal the sides of the biscuits.
  • Lightly spray the air fryer basket with oil or use a parchment liner. Cook for 8 minutes at 370 degrees F.
  • Allow to cool in the air fryer for 2 minutes before removing.

NOTES

  • Don’t overcrowd the basket – you need to leave room for air to circulate and for the biscuits to expand.
  • Store leftovers in the refrigerate in an airtight container for up to 3 days. To reheat: in the air fryer at 350 degrees F for 2-3 minutes or until heated through.

Because every air fryer is different, we recommend checking your food at the halfway point and adjusting the cooking time if necessary.
