One of my favorite parts about heading into Spring is the appearance of the seasonal veggies, especially artichokes. Fresh artichokes are in season during Spring and Fall months, although it’s not uncommon to find them during the Summer as well.

If you’ve never eaten fresh artichokes before, you are in for a real treat. Trust me when I say they are like nothing you’ve ever eaten before. Almost like a finger food until you get down to the delectable artichoke heart.
How Do You Eat an Artichoke?
This is a two-part process. After the artichoke halves are cooked, you’ll start with the outermost leaves. The “meat” is only on the bottom part of the leaf. Pull the lower part of the leaf over your bottom teeth, scraping across the leaf to remove the “meat”.
After you’ve eaten all the leaves, it’s time to move on to the artichoke heart. Prepare yourself – that last bite of a fresh artichoke is the BEST!
Choosing the Best Artichokes
When you’re browsing the produce section you’ll want to look for the “good” artichokes. Keep these tips and helpful information in mind when you are shopping.
- Fresh artichokes are a beautiful medium shade of green. Stay away from lighter colored ones – they aren’t as fresh.
- You want the leaves to be set closer together rather than spread apart.
- Choose artichokes that are heavier and feel solid.
- Smaller ones are the most tender and tend to be a little sweeter.
- The larger the artichoke is, the bigger the heart will be.
Ingredients for Air Fryer Artichokes
For the Artichokes:
- olive oil
- salt and pepper
- garlic powder
Homemade Aioli Sauce:
- mayonnaise – swap for Greek yogurt if you want a healthier option
- minced garlic – mince your own cloves, or use the store bought kind in a jar
- cracked peppercorn
- paprika – for a smokier flavor, use smoked paprika
- lemon juice
How to Make Roasted Artichokes in the Air Fryer
Making the Aioli
Combine the mayo, seasonings, lemon juice, and minced garlic in a small bowl and stir. Set aside or let it chill in the fridge until you are ready to serve.
Making the Artichokes
Preheat the air fryer to 350 degrees F.
Prep the artichokes. Remove the tough outer leaves and trim the stems so there’s only ½ to ¾ inch left. Cut off ¾ inch off the tops, and trim the tips of the remaining leaves with kitchen shears (be careful – they’re sharp!). Using a sharp kitchen knife, cut each artichoke in half longways.
Remove Choke. The choke is the little hair-like pieces located towards the center and above the heart. Scrape the choke out with a spoon now, or wait until after it’s cooked.
Add lemon juice. Squeeze a little juice on the cut side of the artichokes. This will keep them from turning brown.
Brush and season. Using a pastry brush, add some olive oil on both sides, then season the cut side with garlic powder, salt, and pepper.
Air fry. Place the artichokes cut side down in the basket and cook for 6 minutes. Flip each half, then continue cooking for another 4 minutes or until they are tender. If you are using larger artichokes, you may need to extend the cooking time and decrease the time if they are smaller.
Serve. Remove the artichokes from the air fryer and let them rest a few minutes before serving with our homemade aioli.
How long do cooked artichokes last?
They’ll last around 5 days when stored in an airtight container. However, they are best eaten fresh right after you make them.
Should fresh artichokes be refrigerated?
Yes. Keep them in the fridge until you are ready to use them. They will last up to a week when properly stored.
How do you know if artichokes have gone bad?
You can tell when an artichoke is bad if it feels lighter than it did when you bought it, the leaves are starting to open up, or it may even be a little squishy.

Air Fryer Artichokes
- 1/2 cup mayonnaise
- 1 Tablespoon minced garlic
- 1 teaspoon dried dill
- 1 teaspoon paprika
- 1/2 teaspoon cracked pepper
- Juice of 2 lemon wedges
- 2 fresh artichokes rinsed & patted dry
- 1 lemon cut in quarters
- 1 Tablespoon olive oil
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon cracked pepper
- 1 teaspoon garlic powder
- Prepare the sauce by combining the aioli ingredients in a bowl and stirring to combine. Set aside or refrigerate until ready to serve.
- Preheat air fryer to 350 degrees F.
- Prepare your artichoke by cutting down the stem to ½ – ¾ inch and removing the tough outer leaves. Remove the top ¾ inch of the artichokes. Trim the tip off each remaining artichoke leaf with kitchen shears. Cut artichoke in half from top to stem.
- Remove the choke (inedible small hair-like pieces at the center of the heart) by scraping out with a spoon. This step can also be done after cooking if preferred.
- Squeeze a little lemon juice on the cut side of the artichoke hearts to keep them from turning brown.
- Brush olive oil over both sides of the artichoke halves. Season the cut side with salt, pepper and garlic powder.
- Place seasoned artichokes cut side down in the air fryer basket and cook for 6 minutes. Flip and cook for 4 more minutes. Test a leaf for doneness.
- Carefully remove cooked artichoke hearts from air fryer and allow to cool for a couple minutes before serving with aioli sauce.
- Cooking time is per batch.
- You may need to adjust cooking times based on the size of your artichokes.
- Can be served hot or cold.
- Although best eaten fresh, leftovers can be refrigerated for up to 5 days.
